New Sem with Cheese parfait. =)

Hi guys, long time no see, sorry about that because i was busy for all my assignment.
Now, i study my new sem in my collage MIB. The fun things for now is, i learning dessert, it is really delicious. Wonder how fun is the class is. love it so much. Let's share a frozen dessert that i learn recently and it is my Favorite. =)


IVORY ( Cheese parfait )





Cheese parfait ( 12 serving )
80gm   Egg white
15gm   Sugar

140gm Sugar
30ml    Water

400gm Mascarpone Cheese
60gm   Icing Sugar

540gm Fresh cream

Method
- Prepare Italian meringue and cold to room temperature.
- Whipped fresh cream to soft peak.
- Mix mascarpone Cheese together with icing sugar, cold down to room temperature.
- Fold in meringue to cheese mixture.
- Fold cream to cheese meringue misture carefully.
- Frozen the parfait in the plastic cylinder ( 15cm  x 8 cm ).

                                                                                                                                                                     

Sugar wafer
68gm   Butter
120gm Sugar
60gm   Flour
60gm   Glucose Syrup

Method 
- Mix all ingredients together to be a paste, until the paste is not stick to your hand or bowl.
- Bake it at 180℃  until golden brown.
