Blueberry Cheesecake:
Crust:
1 cup graham cracker crumbs
2 tbsp unsalted butter
1/2 cup brown sugar
Filling:
- 2(8oz) pack cream cheese, softened
- 1/3 cup sugar
- 1 tsp vanila extract
- 2 cups cool whip cream
- 1 jar of blueberry preserves
- 1tsp gelatin powder
- 3 tbsp water
Method:
- Combine crust ingredients and line it in to pie pan/cake ring.
- Beat cream cheese and sugar in mixing bowl,add in vanila extract.
- Beat cream cheese until fluffy. Add in gelatin ( dissolve in water ) to mixture.
- Add whip cream, fold gently.
- Pour the mixture into the cake ring.topping with the blueberry preserves.
